Barley is a versatile cereal grain derived from the grass Hordeum Vulgare. It resembles wheat berries, although it is slightly lighter in color. It has a nutty flavour and a chewy consistency. Pearl barley (or "pearled barley") is barley processed to remove its hull and bran. Like many of its fellow grains, the barley grain contains an outermost hull that is not considered digestible. For this reason, the outermost hull must be removed from the grain, and this removal requires some processing. Pearl barley is taken a step further, polished to remove the bran layer. Pearl barley is the most common form of barley for human consumption, probably because it cooks faster and is less chewy than other, less-processed forms of barley.
Pearl barley is similar to wheat in its caloric, protein, vitamin and mineral content, though it differs in that some varieties are high in lysine. It is cooked mainly in soups and stews, also as an ingredient for stuffing cooked potages or sweet dishes. It is the primary ingredient of the Italian dish orzotto.

How to Use Barley:
Before cooking barley, rinse it thoroughly under water and pressure cook till done. You may also soak the barley before use. Use barley and water in the ratio of 1:3. It usually takes around an hour to cook. Pearl barley will take relatively less time to cook than hulled barley.
